My partner (my lang book tells me that's "fairn korng porn" please correct if wrong!) has a vast collection of cookbooks.

All the Thai ones (written in english about Thai cooking) have curry paste recipies that vary wildly and general taste nothing like the ;buy over the counter; types that they sell in great cones at Tesco Lotus!

My question is...

Do native Thais make their own pastes or do they go down the market and get some pre-made stuff from a reputable stall?

I imagine it depends on where you live, amongst other things. It's just my partner has this romantic view of millions of Thai's frantical pounding away at their pestle and mortars !?

PS what is Thai for a Pestle and Mortar type instument ?

I'm not sure about that even if i'm Thai.

Some family still do traditional curry paste themselves. I and my parents buy them from the stall but we'll do next step ourselves. Like you said, some are really delicious and some are so bad that I could have a problem with my stomach!

ครก is quite an interesting Thai word. Along with being the name for the mortar as mentioned above, it is also the word used for mortar bombs and there is the tastey ขนมครก.
