All the Thai ones (written in english about Thai cooking) have curry paste recipies that vary wildly and general taste nothing like the ;buy over the counter; types that they sell in great cones at Tesco Lotus!
My question is...
Do native Thais make their own pastes or do they go down the market and get some pre-made stuff from a reputable stall?
I imagine it depends on where you live, amongst other things. It's just my partner has this romantic view of millions of Thai's frantical pounding away at their pestle and mortars !?
PS what is Thai for a Pestle and Mortar type instument ?
